The soft-shell blue crab is a high-quality Mexican product. These crabs are carefully chosen while changing shells because their previous shells do not allow them to expand, this stage allows a softness in its shell and becomes more suitable for consumption.
This characteristic also allows it to be consumed entirely. This interesting species, before changing shell starts absorbing more water almost 70 % of its body weight, and the hydrostatic pressure along with its muscle’s movements produce the shearing of its old shell.
